Mongolian Beef

This came out very nice for the freeze dryer. In hindsight I should have thickened the gravy a bit but none the less I enjoyed the meal.


INGREDIENTS:

2 cups soy sauce
2 lbs strip steak cut in thin slices
2 cups beef broth
6 green onions chopped
1 head broccoli cut in spears
4 carrots cut into matchsticks
1/2 cup brown sugar
4 cloves minced garlic
1 Tbsp chopped ginger
sesame seeds (optional)

6 packs of ramen noodles with seasoning packet discarded

PROCEDURE:

mix beef and soy sauce in a bowl and let marinate for 1 hour

Add beef and soy sauce mixture to large pan. Cook slowly until beef is almost done
Add ginger and garlic to pan and continue to cook until beef is done (no pink meat)
Add beef broth and brown sugar to pan and bring to a boil
Make a slurry of cornstarch and water
Add slurry to pan and mix If you would like thicker sauce add some more slurry until desired consistency is achieved
Reduce heat to simmer and add broccoli and carrots. Cover and simmer until vegetables are tender
Add green onions and sesame seeds if used
remove from heat
Let cool and tray it up on your fd trays. Freeze until frozen solid. I separated the beef and vegetables and froze the sauce separately but the sauce did puff up in the freeze dryer so be aware if you do this

Cook Ramen according to packet instructions. Do not use the seasoning packets. Tray up and freeze solid before freeze drying

Chocolate Covered Maraschino Cherry Pie

 This is a pretty easy recipe to follow. The two must have ingredients are the Reese Syrup and the Ghirardelli Dutch Cocoa. The results are definitely worth the effort to source these.




Ingredients: 

Cherry filling
3 cups milk
3 TBS sugar
3 TBS instant tapioca
1 1/2 tsp Agar
3/4 cup Reese Maraschino syrup

Chocolate filling
2 cup milk
4 TBS Ghiradelli 100% Cocoa Dutch Processed
4 TBS sugar
2 TBS instant tapioca
1 tsp agar

Oreo pie crust

Process:

Cherry filling:

In a saucepan combine milk, sugar, tapioca and Agar. Mix well and let sit for 5 minutes. After sitting for 5 minutes put on high heat and stirring constantly bring to a full boil. That is a boil that doesn't go away with stirring. Remove from heat and continue to stir for a few seconds to cool a bit. Pour mixture into an oreo pie crust. Fill crust to about 3/4 full leaving enough room for the top layer of chocolate. Set aside and let cool preferably in the refrigerator so it will set while making the chocolate

Chocolate filling

In a saucepan combine milk, cocoa, sugar, tapioca and agar. Mix well and let sit for 5 minutes. After sitting for 5 minutes put on high heat and stirring constantly bring to a full boil. Remove from heat and continue to stir for a few seconds to cool a bit. Pour mixture over cherry filling in the pie crust. Chill for a few hours or until cold.

Apple Cider Pork Loin Pot Roast

 This pot roast came out very tasty. Surprisingly you don't taste the apple cider. It didn't come out sweet but there is a subtle difference. A very good roast if I do say so myself


 


Ingredients

5 pounds Boneless Pork Loin
6 cups apple cider
2 cups Chicken Stock/Broth
1 lb Baby Carrots
2 Medium Onions cut in quarters
1 1/2 pounds small potatoes cut in half
6 stalks of chopped celery
2 TBSP vinegar
1 tsp Thyme
2 tsp salt
1 tsp pepper


Directions

Put roast into large crock pot. Add remaining ingredients and cook on low for 8 hours. If you like firm vegetables don't add the veggies until the last 2 hours.

Freeze Drying:

Place roast in refrigerator overnight. Remove any fat that has floated to the top and solidified.

Remove roast and with a slotted spoon remove cooked vegetables. Trim any remaining fat from roast. Cut roast into desired slices and place on freeze dryer tray. Place drained vegetables on freeze dryer trays. Save about 4 cups of the broth and place on freeze dryer trays. Freeze all until frozen solid. Transfer frozen trays to freeze dryer and freeze dry.

Chicken Parmesan

 Today I make a viewer suggested Chicken Parmesan. The results were great The chicken breast reconstituted so well even though it was such a thick cut. Hint, fork holes are the key

 
 
 

 Ingredients:

6 chicken breast with fat trimmed off
4 eggs
1 cup Italian Bread Crumbs
1 cup Grated Parmesan Cheese
1 lb grated Mozzarella Cheese
1 lb box of spaghetti noodles
67 oz jar Prego Italian Sauce

In bowl beat eggs until well blended
In separate bowl add bread crumbs and Parmesan Cheese. Mix well
Take one breast at a time and dip it in the egg mixture. Make sure and coat well
Transfer the breast to the bread crumb mix and coat well
Place breast in air fryer do not overlap breast in basket
Set air fryer to 390F and cook for 10 minutes
Turn breast over and cook for another 10 minutes. Breast should measure 165F on thickest part when done
Remove breast from fryer and poke several holes in each breast using two forks. This is important for the rehydration later on.
place on tray and freeze solid then freeze dry

Noodles
Prepare noodles according to box instructions. Tray up and freeze solid then freeze dry

Sauce and Mozzarella
Tray of sauce from the jar and cheese from the bag. Freeze solid then freeze dry

To package and reconstitute. Make a layer of noodles topped wih two chicken breasts. Package sauce and cheese separately. To reconstitute add enough water to cover the noodles and just starting to touch the breasts. Add water to bag with mozzarella cheese so that it can soak. Bake chicken covered with foil for 30 minutes at 450F. Drain excess water saving for the sauce. Reconstitute sauce and pour over noodles and breast. Drain Mozzarella cheese then spread over chicken breasts. Cover with foil and cook a further 15 minutes. Enjoy!

No Bake Pumpkin Pie Freeze Dried Or Not

I am so excited to share this video. This is a No Bake Pumpkin Pie made without eggs. Instead we use Agar Agar Powder. The results are amazing. You can make this fresh and not freeze dry but of course I had to take it a step further and freeze dry and reconstitute a whole pie!


 

Ingredients

1 29 oz can of Pure Pumpkin
2 12 oz cans of Evaporated Milk
1 1/2 Cups Granulated Sugar
1 tsp Salt
2 tsp Ground Cinnamon
1 tsp Ground Ginger
1/2 tsp Ground Cloves

1 Cup Water
8 tsp Agar Agar Powder

2 9 inch pre maid graham cracker pie crusts.

 Procedure

In large bowl Combine Pumpkin Milk Sugar Salt Cinnamon Ginger and Cloves. Mix well.

In a separate bowl add water and Agar Agar Powder. Mix well and let sit for 1 minute.

In pot add pumpkin mixture and agar mixture, stir well
On high heat bring to a boil stirring constantly. It should bubble immediately when you stop stirring.

If eating fresh pour mixture into crusts

If freeze drying pour mixture into FD tray this will fill 2 trays of 4 cups each and make 2 pies after reconstitution. After freeze Drying powder in blender or vitamixer and package. To reconstitute add 1 trays worth of powder to pot. Stir in 3 cups of water. Bring to boil as before. Pour reconstituted/boiled mixture into 1 pie crust.

Shepherds Pie

 Ingredients

Topping

4 lbs potatoes
1 cup milk
1 cup sour cream
Salt and Pepper

Filling

3 lbs lean Ground Beef
1 Large onion diced
1 cup Frozen Corn
2 cups Frozen Peas and Carrots
2 Tbs Rosemary
2 Tbs Thyme
4 Tbs Worcestershire
2 Cups Beef Broth
4 Tbs Tomato Paste
2 tsp minced garlic

Procedure

Peel and dice potatoes. Boil in water until you can insert a fork easily
Drain boiling water. Place potatoes in large bowl and mash with a potato masher. Add milk and sour cream and continue mashing. Season with salt and pepper to taste. Spread mashed potatoes in trays and freeze until frozen solid.

Brown Beef with onions. Drain fat then add remaining ingredients. Simmer for 20 minutes. Let cool and then tray on freeze dryer trays. Freeze until frozen solid.

Insert frozen trays into fd and Freeze Dry

Corn Chowder Freeze Dried

 Amazingly the freeze dried chowder actually tasted much better then the fresh. The flavors melded together. The hash browns did the trick and made a nice creamy chowder. I was really impressed with the results!

 
 

 Ingredients:
1 lb bacon
2 chopped onions
2 cans of cream style corn
2 cans of whole kernel sweet corn undrained
2 12oz cans of evaporated milk
1 tsp Worcestershire sauce
1 tsp salt
1 tsp pepper
1 2 lb bag of frozen hash browns (unseasoned and thawed)

Procedure

Cook bacon in the oven per video. Blot as much grease off as possible. Crumble and add to crock pot
Add remaining ingredients to crock pot. Cook covered on low for 6 hours.

Freeze Dry and enjoy!

Hawaiian Beef Pot Roast

This pot roast came out Delicious. I hope you enjoy it as much as I did!


Ingredients:

1 Chopped Onion (I used purple onion)
4 Sliced Carrots
1 20 oz can Crushed Pineapple (un drained)
1/2 Cup Brown Sugar (packed)
1/4 Cup Soy Sauce
1 TBSP chopped fresh ginger
1 tsp Black Pepper
2 TBSP minced garlic
1 12 oz bottle Heinz Chili Sauce
1 15 oz bottle of Kikkoman Teriyaki Marinade & Sauce
2 cups vegetable broth

3 1/2 lb Lean Top Round Roast

3 lbs red potatoes (diced into small pieces)



Directions:

Combine all ingredients except the beef and potatoes in a large Crock pot and mix well. Place Roast into Crock pot. Cook on low for 5 hours.
Add Potatoes and continue to cook for a further 3 hours. When cooled down shred beef and mix well. For best results place in refrigerator overnight. The next day skim any fat that has solidified on top. Place pot roast into molds. Freeze in your freezer until frozen solid. Remove from molds and place on Freeze Dryer trays. Freeze dry. This was a long run for me (probably because of the pineapple) so count on a 40 hour run.

Pepper Steak Meal In A Mylar Bag

 I hope you enjoy this recipe as much as I did. It freeze dried and reconstituted perfectly!



Ingredients:

3 lbs thinly sliced lean steak
3/4 cup soy sauce
2 Tbsp minced garlic
1 large sliced onion
1 28 oz can crushed tomatoes
1 cup water
2 Tbsp sugar
2 Tbsp corn starch
2 Tbsp Worchestershire Sauce
3 sliced Bell Peppers

Procedure

In bowl add steak and soy sauce and garlic. Marinate for at least 1 hour.
In a hot skillet add 1/2 of the steak and all of the marinade. Cook steak until browned. Remove first half of steak and set aside, add second half of steak and cook until browned. Ad to other browned steak and set aside.

In the skillet add water, sugar Worchestershire Sauce and corn starch to marinade. Mix well to remove lumps.

In crock pot add steak. Pour marinade over steak, add undrained tomatoes and sliced onions. Turn crock pot on low and cook for 5 hours.

After 5 hours add sliced Bell Peppers and cook for a further 1 hour on low.

Turn of heat and let cool. Refrigerate over night.

Pour mixture into molds. Freeze Solid. Remove from molds and place on the Freeze drier trays. Freeze dry

John In Bibs Strawberry Smoothie

 I think this would make a nice Christmas gift, is it too early to be thinking about that? This recipe is for 1 Medium Freeze Dryer tray.

Ingredients:

1 1/2 cups Greek Yoghurt (I used vinella)
1 1/2 cup frozen sweetened sliced strawberries (thawed)
1 cup milk 

Procedure:

Add all ingredients to your blender. Blend until well blended. Pour into molds and freeze until frozen solid. Remove frozen disks from molds and place on the FD tray. This was a pretty long run due to the thickness of the disk. It ran 40 hours and I also added 8 hours on top of that because of work schedule.

Shipwreck Stew John In Bibs Style

 

Ingredients:

2 lbs Lean Ground Beef
1 Large onion
4 Cups sliced potatoes (I used canned)
4 cups diced carrots (I used canned)
2 cans  Garbanzo Beans/Chick Peas undrained
2 cans Green Beans undrained
3 14 oz cans of fire roasted diced tomatoes undrained
3 cups frozen corn
1/4 cup Knorr Beef Bullion Powder
2 cups water
1/2 TBS ground pepper
1 TBS "Slap Ya Mama" Cajun Seasoning


Procedure:

Brown Ground Beef with onions, drain and add to crockpot
In crockpot Add remaining ingredients stir/mix well. Cook on low for 8 hours
Tray Up stew on Freeze Dryer trays. I divided into portions using Frozenright.com modular moulds
Freeze until frozen solid
Freeze Dry
Enjoy!

Salted Caramel Latte Squares

 These Salted Caramel Latte Squares are almost if not the best sweet I have made to date. They came out melt in your mouth airy. You will not be disappointed!

 Ingredients:

2 cups milk
2 TBS French Roast Instant Coffee
4 TBS Torani Salted Caramel Syrup {I did not use the sugar free option)
1 8 oz tub of cool whip

Procedures:

warm milk to below boiling
mix in coffee and syrup

set aside

Put a dollop of whip cream into each mold
Place in freezer to firm up

Remove whipped cream mold from freezer when coffee mixture is room temperature
top off each mold with coffee mixture

Return to freezer and freeze until solid (over night)

Remove squares from mold and place on Freeze dryer trays

I used the option Pre Frozen Liquid so place in freeze dryer when prompted.

John In Bibs A Better Salad Bar

 Today we perfect the salad bar I started last week. The results are much better.

 


Ingredients: 

Tossed salad with the ingredients of your choice 

1 packet of Italian Dressing mix 

2 1/2 cups water 1/2 cup vinegar 

3 tsp Agar Agar powder

Procedure: 

place prepared salad into molds 

In a sauce pan mix dressing mix and Agar Agar with water and vinegar. 

Bring to boil and boil for 5 minutes. 

Set aside and let cool so that it is cool enough that it won't scorch your salad but hasn't started to set. 

Pour over salad. Leave to set at room temperature. 

Place in Freezer once set. 

When frozen solid remove from molds and place on your freeze dryer trays. FD and Enjoy !

Caramelized Onion Balls

 These Freeze Dried Caramelize Onion Balls are so easy to make. Just two ingredients. They came out airy and melt in your mouth. They tasted so sweet that it will be hard to put them down. You will not be disappointed!!

 
 
Ingredients:
 
6 lbs Yellow Onions
1 Cup Bourbon
 
Procedure:
 
Slice onions and place in large crock pot
Pour Bourbon over onions
 
Cook on low for 12 to 14 hours
let cool and then put onions into blender. Blend until you get an applesauce consistency.
 spoon into molds
freeze until solid
remove from mold and freeze dry

Bourbon BBQ Chicken

 This recipe comes out so nice, just a hint of Bourbon blends nicely with the BBQ sauce. Enjoy!


 

 Ingredients:

2 Med Diced Onions
2 Shots Bourbon
5 lbs of Boneless Skinless Chicken Breasts
2 cups BBQ sauce

Procedure:

In crock pot add onions. Pour Bourbon over onions. Layer chicken over onions. Pour BBQ sauce over chicken covering them all.
Cook on low heat for 8 hours

When cooked shred chicken
Add more BBQ sauce and Bourbon to taste

Serve on Buns or Crackers

Chicken Cacciatore

3-4 lbs Boneless Skinless Chicken Breast
1 Jar of your favorite Pasta Sauce
1 Onion coarsely Chopped
1 Red Bell pepper Chopped
1 Green Bell pepper Chopped
2 tsp Italian Seasoning
2 tsp Pepper Flakes
Pepper to taste
8oz sliced mushrooms
1 TBS minced Garlic
1/2 cup freeze dried tomato powder or 1 can of tomato paste

Brown Chicken in skillet and add to bottom of Crock Pot
Add remaining ingredients and cook on low for 8 hours
Serve over noodles

JIBs Special Recipe Sweet Chili Sauce

After several Freeze Dryer explosions and lots of bad words, i worked it out. Here is an acceptable Sweet Chili Sauce that is Freeze Dryer friendly.

 

Ingredients:

1/2 cup vinegar
1 TBS minced garlic
1 TBS crushed red pepper
1 cup water
2 cups unsweetened applesauce

Procedure:

In a saucepan combine vinegar, garlic, red pepper and water. Over high heat bring to boil and boil for 2 minutes.

Remove from heat and stir in applesauce

Tropical Fruit Crumble

 I am really happy with the end results. Perfect combination of tart and sweet topped with a fantastic crumble and English Custard



Ingredients:

4lb bag of mixed fruits
2 TBS ground cinnamon
2 cups sugar
2 cups flour
Bird's Custard (optional)
36 Nature Valley Crunchy Oats N Honey Granola Bars

Procedure:

In large bowl combine fruit cinnamon sugar and flour. You may need to cut the fruit into smaller chunks. Mix well. Spread out on two Medium Harvest Right Freeze Dryer trays lined with silicon mat or parchment payer. The liner is VERY IMPORTANT as this will stick.

If desired mix custard according to package directions. Using a double recipe. This will fill 1 Medium Harvest Right Freeze Dryer tray.

On fourth tray arrange Granola Bars

Freeze all four trays until frozen solid

On Freeze Dryer select Pre Frozen Solid and follow screen instructions.

Package Freeze Dried contents in 3ea 9 x 7 x 3 foil pans

Reconstitution:

In one pan add 3 cups cold water to fruit mix, removing toppings for later. Cover pan with foil and bake in preheated oven at 375F for 30 minutes.

Remove Foil and top with crumbled granola, return to oven for an additional 15 minutes.

Cool for at least 5 minutes or desired heat. Top with reconstituted custard if desired.
Remove foil

Cornbread From Freeze Dried Batter

 

This recipe is written for the equipment/packaging I am using. At the end I will include some guidance if you want to use an 8 x 8 pan

Ingredients:

2 cups Yellow Corn Meal
2 cups all purpose flour
8 TBSP sugar
8 tsp baking powder
1 tsp salt
2 cups milk
2 eggs
1/2 cup apple sauce
optional Jalapenos to taste

Preparation:

In large bowl combine corn meal, flour, sugar and salt. DO NOT add baking powder
Mix well. Add milk, egg and apple sauce mix well

spoon batter into 4oz round silicone molds You should end up with 12 disks
Freeze until solid and then Freeze Dry Disks. If jalapenos are used then add diced jalapenos to Freeze Dryer trays separately.

Packaging:

using 3 disks at a time powder in a blender of similar
Place powdered batter into 8 x 6 x 2 foil pan. You will need 4 pans
In a ziplock bag add 2 tsp of baking powder, you will end up with 4 bags
In a ziplock bag and 1/4 of jalapenos if used

place cardboard lid on foil pan and place pan in clear vacuum seal bag
place 1 300cc oxygen absorber in each bag. Vacuum seal bags
Place vacuum sealed clear bags in vacuum seal mylar bag add another 300cc Oxygen absorber to each bag and Vacuum seal

Reconstitute:

Open package and remove ziplock bags. Add 3/4 cup water to pan with powdered batter. Mix well and let sit several minutes, mix again and add the ziplock bag of baking powder and jalapenos if used. Let sit 2 minutes

Bake at 425F for about 23 minutes or until golden brown.


8 x 8 pan alternative:

follow mixing instructions above. Fd as above. Grind FD batter into powder. divide into two equal parts for packaging. You will get two packages. In each package include a ziplock bag with 4 tsp baking powder and a separate ziplock with FD jalapenos if used. Seal and store. To reconstitute 1 bag remove ziplocks and add powdered batter to a bowl. Add 1 1/2 cups water and mix well. Let sit for several minutes to rehydrate. Mix again and add baking powder and jalapenos (if used) to mixture. Let sit for about 2 minutes. Pour mixture into greased 8 x 8 baking dish and bake at 425F for about 23 minutes or until golden brown.

Deep Dish Taco Casserole

 

 

I am not sure if I mention this in the video but just in case let me tell you this is my FAVORITE casserole. My freeze dried deep dish will not disapoint!

Ingredients:

2 Boxes of Jiffy Cornbread Mix
2 Eggs
2/3 Cup Milk
2 Tbsp Jalapenos

4 lbs Lean Ground Beef
4 cups diced peppers and onions
4 regular cans Rotel diced tomatoes
4 packets taco seasoning
4 cups corn

1 lb shredded cheese

Procedure:

Topping:
Mix Jiffy with eggs and milk add jalapenos
Pour into 3 9 x7 3inch deep foil baking tins
bake according to box directions

Filling:

Brown ground beef drain and rinse well. Soften peppers and onions in a large pot. Add Rotel, taco seasoning and corn mix well. Add rinsed ground beef and mix well. Simmer for 20 minutes

Using 3 medium Harvest Right trays place 2.5 lbs of meat filling. On the third tray add 1 lb of shredded cheese. Transfer to freezer until frozen solid

Using the 4th medium Harvest Right tray place the 3 pieces of cooked cornbread. Transfer to freezer until frozen solid

I used the setting pre frozen solid for the freeze drier. I ran it for about 40 hours which incuded added time because of work schedule.

Sloppy Joe Tater Tot Casserole, Freeze Dried and Reconstituted

 


This recipe comes out great in the freeze Dryer. It is easy to do. I will write the recipe as I did it in the video, which yeilds 3 casseroles and enough sloppy joe mix left over for dinner. You may want to reduce the amount of sauce and meat if you don't want to have leftovers after preparing the freeze dry mix.

Ingredients:

5lbs Ground Beef
2 24oz cans plus 1 15oz Manwich Original Sloppy Joe Sauce
1 large onion
1 bell pepper
1 5lb bag of frozen tater tots
1 lb shredded sharp chedder cheese

Procedure:

Brown Beef drain and rinse then set aside
dice onions and bell peppers and saute until onions are translucent
Add the to 24 oz cans of Manwich
Add ground beef and mix well
Add remaining small can of Manwich
mix well and simmer for about 20 minutes

Bake tater tots according to bag directions

Line your Harvest Right Freeze Dryer trays with paper towel. Put half of the tater tots on each tray. you will end up with two trays of tater tots. Cover trays with another layer of paper towel. On one tray sprinkle half of your cheese over paper towel. On the other use something to hold paper towel down, I used Frozen Rights grates that can be purchased at frozenright.com place in freezer and freeze until solid

In the other two trays fill until they each have 2.5 lbs of sauce mix. Top one tray with remaining cheese. Freeze until frozen solid.

Package:

In foil tray line bottom with some of your fd tater tots
put one layer of sauce (without the cheese) then add another layer of sauce (the one with cheese). Top with a layer of tater tots and sprinkle cheese over tater tots. Seal foil pan and seal in mylar bag

Reconstitute and Bake:

Pre heat oven to 425F add 3.5 cups of water to one pan of the fd sloppy joe casserole. Cover with foil and place in oven. Bake for 30 minutes. Remove foil and bake uncovered for a further 15 minutes.

JIB's Country Breakfast, Ham Eggs and Grits Meal In A Mylar Bag/Jar Ep154

This dish comes out FANTASTIC. I believe you will be as impressed as I was. It will certainly hit the spot first thing in the morning.

 


 Ingredients:

16 Large Eggs
1 Cup Milk
3 Cups Quick 5 Minute Grits
12 Cups Water
Salt to taste

2 lbs Ham Steaks

Process:




Cook grits according to package instructions. Make 4 servings at a time.
Pour into molds and freeze until solid. Remove from molds and place on Freeze Dryer Trays.



Add Eggs and Milk Salt and Pepper to a large mixing bowl and mix well
pour eggs into large skillet. Cook on Med/Low stirring regularly so the eggs don't stick. Cook to a soft scramble state.
Fill molds and freeze until solid. Remove from molds and place on Freeze Dryer Trays.



Grill Ham Steaks on high heat until browned on both sides. Cut steaks into strips and place on Freeze Dryer Trays. Freeze until solid.



I ran the freeze drier on the settings Frozen Solids. It ran for about 48 hours which included added time due to my schedule.

I reconstituted 2 disks of grits, 1 disk of eggs and 1/8 of ham with 1 1/4 cups hot water

Lasagna Freeze Dried And Fresh Comparison


5 lbs Lean Ground Beef
2 tsp Olive Oil
1 Tbsp Minced Garlic
1 Large onion
2 28 oz cans of crushed tomatoes
2 15 oz cans of tomato sauce
2 tsp Italian Seasoning
1 lb Ricotta Cheese
1 lb of Cottage Cheese
1 1/2 lb of Shredded Mozzarella Cheese
1 cup grated Parmesan Cheese
2 Eggs
16 Lasagna noodles (you may want to throw in a few extra)

Brown Beef rinse and drain then set aside

In large pot cook noodles according to package directions. Rinse and leave in cold water. Set aside.

Sauce:

In a skillet add olive oil and bring up to heat. Mix in Minced Garlic and Onion. Saute until the onions are translucent. Add crushed tomatoes and tomato sauce mix in Italian seasoning stir and simmer. Add Ground Beef that has been rinsed and drained to sauce. Bring to boil reduce heat to low and simmer for 20 minutes. Set aside.



Cheese:

In a large bowl combine Ricotta, Cottage, Parmesan Cheeses and 1 pound of the Mozzarella Cheese (set aside remaining Mozzarella Cheese for topping) add the two eggs. Mix well and set aside.




Put it all together:

have 4 foil pans (Amazon affiliate link: https://amzn.to/3t8jk0b ) ready to fill
have 4 Medium Harvest Right Freeze Drier trays ready to fill with liners

Bottom layer:

trim noodles and lay out as seen below, this is the bottom layer. Use cut off pieces for the "fresh" lasagna we will make at the same time.



top noodles with layer of sauce mixture. Place tray in freezer to freeze solid. In fresh pan spoon a layer of sauce on to bottom, top with the cut off portions of noodles.

2nd layer:

Lay out noodles as before, this time spread a little less than 1/4 of cheese mixture on to noodles. Top with meat sauce. Place tray in freezer to freeze solid. In fresh pan top noodles with cheese mixture then top with sauce.



3rd layer:

Repeat 2nd layer in trays and the fresh pan.

Top layer:

In trays. Spread out sauce (with no noodles) and top with dollops of cheese mix, sprinkle with remaining Mozzarella and also some Parmesan cheese. Place tray in freezer to freeze solid. In the fresh pan place layer of noodles and top with sauce. Top with dollops of cheese mix, sprinkle with remaining Mozzarella and some Parmesan cheese.





Freeze Dry:

Once trays are frozen solid fire up the freeze dryer. I used setting frozen liquid. When prompted insert trays into freeze dryer and follow screen prompts.



Assembly:

In the 3 remaining foil pans first take the bottom layer, flip it over and place in bottom of foil pan. Then repeat for the other layers flipping each. For the top layer do not flip, simply place on top as is. Bag, add O2 absorber and heat seal.

You can see me reconstitute in the video at the top of the post. I found that adding about 4 cups of water gave good results.

Freeze Dried Yogurt And Oats Breakfast Bars With Recipe




Ingredients:

 
4 Cups Honey Bunches of Oats Cereal
1 Cup Grape Nuts Cereal
1 2lb container of Yogurt
1 8oz container Cool Whip

 Directions:

Combine ingredients in large bowl

Spoon into Silicone Molds
 
Freeze until solid
 
Remove from mold and place on Freeze Dryer Trays
 
Freeze Dry
 
I used setting Frozen Liquid
