No Bake Pumpkin Pie Freeze Dried Or Not

I am so excited to share this video. This is a No Bake Pumpkin Pie made without eggs. Instead we use Agar Agar Powder. The results are amazing. You can make this fresh and not freeze dry but of course I had to take it a step further and freeze dry and reconstitute a whole pie!


 

Ingredients

1 29 oz can of Pure Pumpkin
2 12 oz cans of Evaporated Milk
1 1/2 Cups Granulated Sugar
1 tsp Salt
2 tsp Ground Cinnamon
1 tsp Ground Ginger
1/2 tsp Ground Cloves

1 Cup Water
8 tsp Agar Agar Powder

2 9 inch pre maid graham cracker pie crusts.

 Procedure

In large bowl Combine Pumpkin Milk Sugar Salt Cinnamon Ginger and Cloves. Mix well.

In a separate bowl add water and Agar Agar Powder. Mix well and let sit for 1 minute.

In pot add pumpkin mixture and agar mixture, stir well
On high heat bring to a boil stirring constantly. It should bubble immediately when you stop stirring.

If eating fresh pour mixture into crusts

If freeze drying pour mixture into FD tray this will fill 2 trays of 4 cups each and make 2 pies after reconstitution. After freeze Drying powder in blender or vitamixer and package. To reconstitute add 1 trays worth of powder to pot. Stir in 3 cups of water. Bring to boil as before. Pour reconstituted/boiled mixture into 1 pie crust.

    1. It was a store bought mini crust just for test purposes. Of course you can make your own crust and use a silicone mold. I bet it would work nicely.

  2. I have a granddaughter who is allergic to eggs so I am going to make this and freeze dry it for her. Thank you John for the Agar Agar suggestion and I am so excited to try this with a few pie pumpkins I grew and will use for these pies instead of canned.

  3. I’m excited to try the end product. My poor daughter in law cannot eat eggs or milk so I’m exchanging for evaporated goat milk. The gelling is amazing. I never knew.
