Mongolian Beef

This came out very nice for the freeze dryer. In hindsight I should have thickened the gravy a bit but none the less I enjoyed the meal.


INGREDIENTS:

2 cups soy sauce
2 lbs strip steak cut in thin slices
2 cups beef broth
6 green onions chopped
1 head broccoli cut in spears
4 carrots cut into matchsticks
1/2 cup brown sugar
4 cloves minced garlic
1 Tbsp chopped ginger
sesame seeds (optional)

6 packs of ramen noodles with seasoning packet discarded

PROCEDURE:

mix beef and soy sauce in a bowl and let marinate for 1 hour

Add beef and soy sauce mixture to large pan. Cook slowly until beef is almost done
Add ginger and garlic to pan and continue to cook until beef is done (no pink meat)
Add beef broth and brown sugar to pan and bring to a boil
Make a slurry of cornstarch and water
Add slurry to pan and mix If you would like thicker sauce add some more slurry until desired consistency is achieved
Reduce heat to simmer and add broccoli and carrots. Cover and simmer until vegetables are tender
Add green onions and sesame seeds if used
remove from heat
Let cool and tray it up on your fd trays. Freeze until frozen solid. I separated the beef and vegetables and froze the sauce separately but the sauce did puff up in the freeze dryer so be aware if you do this

Cook Ramen according to packet instructions. Do not use the seasoning packets. Tray up and freeze solid before freeze drying
